GUT Bread No.4 — Rye (Secale cereale)
This dark, moist, treacly wholegrain rye bread is naturally richer in both soluble and insoluble fibre than wheat. These fibres act as prebiotics, feeding beneficial gut bacteria and helping to support balanced digestion.
The sourdough fermentation is just as important. It begins to break down the bread before you eat it, making it easier to digest, whilst also improving the absorption of minerals such as iron and magnesium. It also plays a role in how the bread affects blood sugar.
This dense rye loaf releases energy slowly, helping to avoid sharp spikes and crashes often associated with white bread. It keeps you fuller for longer, too.
